There is something so very comforting about the smell of freshly baking bread and scones in the oven. And we all need every comfort at this time, so I decided to dust off the old cookbooks and actually get cooking. I also enlisted the help of my siblings, younger sister Jane in Ireland and older sister Liz in Newcastle, UK, and got some of our Mum’s old recipes -our Mum was a wonderful cook and fantastic baker. Me, not so much, but I was very pleased with my results, so good in fact, I decided to name them Katie Daly’s Irish Scones.
Here are 2 simple recipes that I hope you will enjoy and would love to hear from you if you do try your hand at them…….
Katie Daly’s Simple Irish Scones
- 8oz of self-raising flour – I live in Queens and have access to all the Irish baking products at my local store. If you can’t get self-raising flour, add 2 teaspoons of baking powder and 1/2 teaspoon salt to every cup of all-purpose flour.
- 2 oz of caster sugar -or superfine/bakers or ground sugar
- 2 oz butter -Use Irish Kerrygold butter if you can get it
- Pinch Salt
- 1 egg
- Drop of Milk to Combine
Sieve flour and sugar and add butter. Make like breadcrumbs with your fingertips and add a pinch of salt. Beat egg and milk and add to the dry ingredients with a fork to combine. Knead mixture to about 1” thick. Use a glass to cut out the scones, keep them small enough and glaze with egg yolk and a sprinkle of sugar before they go into the oven -180 for 20 minutes…
Serve with fresh whipped cream and jam and tea -absolutely delicious! Enjoy………
Mum’s Brown Bread
- 200g of Whole meal flour
- 200 g of plain flour
- Tsp of bicarbonate of soda
- 1 tsp of salt
- 25g pumpkin Seeds
- 25 g of sunflower seeds
- 1 Tbs olive oil
- I Tbs of Treacle
- 300 ml of Butter Milk -No buttermilk? No problem! Add one tbsp of lemon juice to one cup regular milk
Mix all dry ingredients together then wet ingredients and combine. Bake for 40 Minutes in 200 temp oven.
Serve with Irish butter and jam and tea and enjoy…..
